Keto Macaroni Salad
Ingredients
- 2 cups raw cauliflower, broken into very small pieces
- 1/4 cup Mayonnaise
- 1 tsp Sugar substitute
- 1 tsp cider vinegar
- 1 pack MCT//143™
- 1 tsp. of salt
- 1/2 tsp. of pepper
- 1 tbsp Dijon mustard
- 4 tbsp of thinly sliced celery
- 1/4 cup of chopped bell pepper
- 1/4 cup of chopped onion
- 1 tsp of grated carrot
- 1/4 cup chopped black olives
Instructions
- Steam cauliflower, make sure not to over cook.
- Combine mayonnaise, mustard, vinegar, MCT//143™, salt, pepper, and sweetener. Mix well.
- In a separate bowl, combine cauliflower, celery, carrot, onion, peppers, and olives.
- Pour mayonnaise mixture over and combine gently.
- Chill before serving.
