Gingerbread? In Summer?! YES!! It’s National Gingerbread Day and we are in HEAVEN! The warm, spicy aroma wafting from these tasty Keto treats is everything your late afternoon needs. Pair these cookies with a cold glass of your favorite milk and enjoy!
Gingerbread Cookies
Ingredients
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1/2 tbsp Cinnamon
- 1 tsp ground ginger
- 1/8 tsp ground cloves
- 1/8 tsp Nutmeg
- 1/4 tsp Baking powder
- 1/2 cup Erythritol
- 1/2 cup butter, softened
- 1 Egg
- 1/2 tsp Vanilla extract
Instructions
- Combine almond flour, coconut flour, cinnamon, ground ginger, ground cloves, nutmeg, and baking powder. Set aside.
- In a large mixing bowl, beat the butter and erythritol for 1-2 minutes, until fluffy.
- Add egg and vanilla extract.
- Slowly add in the flour mixture until a dough forms.
- Chill dough in the refrigerator for an hour.
- Roll dough out to 1/4″ thickness.
- Use a cookie cutter to cut out cookie shapes and transfer them to a parchment-lined baking sheet.
- Bake at 350 for 10-15 minutes, until golden brown.
